A typical dark beer, whatever that means. In our case, we have added chamomile to this mildly roasted tastescape. On the nose, it gives a bittersweet note to the earthy fruitiness of Goldings hops, while on the tongue it fits perfectly with the multi-layered bouquet of caramelized malts. A Nordic adventure with a high final gravity and a lasting bittersweet finish.

A unique ale brewed with Brettanomyces lambicus since October of 2022 and matured on fresh cherries at ratio of 1/3 since July 2023. The result is an ale with explicitly redish berry like acidity and a rich spiciness of wild yeast esters and phenols. All this in a carmine red with a penetrating fruitiness that belies the alcohol content. Maturation on cherrywood chips before bottling gives the ale a gently smoky sweetness with a pleasantly dry aftertaste that makes the glass empty faster than perhaps it should.
This is a limited edition version of our chestnut bock aged in American bourbon barrels. The caramel malt and smoky chestnut chip aroma are joined by fruity spicy bourbon notes on the nose, which, combined with the the deep amber color, makes the mind believe that the drink will be boozy. But on the tongue, these suspicions are dispelled by an elegant balance of flavors that will surprise and warm both whiskey and good beer lovers. With a hint of roastiness in aftertaste from the charred bourbon barrels.
A fresh look on a classic Belgian style berry ale. We added 1/5 fresh juneberries for a few months to a blended base from our foeder and a pure Brettanomyces fermenatation. The aroma expresses all the funk from wild yeasts, which is wrapped in an almost cherry like fruitiness of juneberries. On the tongue the untipically high gravity of the beer engulfs the cherry and aronia like juneberry flavours. All of this in a typical wild fermentation landscape with an enduring aftertaste.
A fresh look on a classic Belgian style berry ale. We added 1/5 fresh wild bilberries for a few months to a blended base from our foeder and a pure Brettanomyces fermenatation. The aroma of this brightly violet ale is intertwined with wild yeasts esthers with the mossy and slightly black currant like fruitiness of bilberries. On the tongue the violet becomes a taste - mesmerising beriness with notes of cherry, blueberry and some gooseberries. All of this with a refreshing aftertaste of a boreal forest.
A contemporary take on a Belgian-style berry lambic, fermented with Brettanomyces yeasts from the Senna River Valley and matured on fresh blueberries from Latvian 2023 season. In the aroma of the deep purple drink, wild yeast esters wrap around the mossy essence of blueberry. On the tongue, the blueberry fully plays out its juiciness, which adds slightly tart layer on the moss and funk, as well as playing some unexpected notes of nutmeg and cloves in the aftertaste.
Fermented with Brettanomyces yeasts typical to the Senna river valley and maturated for a couple of months on fresh Latvian blackcurrant berries and leaves of the 2023 season. In the aroma the dry and spicy notes of the blackcurrant leaves outplay the yeast esters, whose soft mossiness slightly slows the screamingly thick and brutally tart juiciness of the berries on the tongue. Pleasantly spicy horse blanket reveals istelf in the aftertaste once the juiciness recedes.
Slightly spicy red ale with a balanced backbone of hops and lightly caramelised malts. On nose the dry smokiness of cayenne pepper bullies the aromas of gentle Amarillo hops and malted barley aside. But a playful caramel reigns on the tongue, leaving the pepper to just nudging the throat to leave the aftertaste to the fruity bitterness of the hops.
