Beekeepers Widow (Barrel Aged) 14%
This is a limited version of our classic braggot, brewed with 2/3 honey and 1/3 specialized barley malts, that has been further aged in a tawny port barrel. The additional couple of months of exposure to the portwine imbued oak has enriched the braggot with flavours of dried fruit, vanilla, cloves and hints of pipe tobacco smoke. The rich and saturated tastescape allows you to sail off to Madagascar with the crew of Adam Baldridge, while being comfortable in your favourite woolies at the fireplace.

ROWAN WILDLING 6.4%
A unique beer made by giving fresh wort to some wild yeast from last year. After almost a year of slow fermentation, in August we poured the beer on fresh rowan berries in a ratio of 1/5. The resulting tastescape is both ascetic and deeply piercing. The astringent dryness characteristic of rowan berries here is overcome by a bitter juiciness, which slowly turns into a melanholic sweetness. All of this sensation is escorted by the gently fair scent of freshly prepared rowan sauna brush and perfectly enriched with various wild yeast esters.
MIXED FERMENTATION ROWAN ALE 2020

This is a limited edition of our spiced saison, which has spent almost a year in a Tokaji wine barrel. Innocent gooseberry notes introduces the foreplay with some cardamom and saffron, jerked shortly after in a primal dance with the esters of the barrel yeasts, traumatised by botrified grapes. Despite the combination of dry and naked beer body and a strong whip of alcohol, the vanillin of the wood with some golden raisin fruitiness allows to soften the experience to a perversly enjoyable level. With a fresh finish of pink peppercorn and blushed cheeks.

William the Cherry 5%
At the beginning of the year we brewed a crispy dry cherry mead, which we aged for a little more than half a year in bourbon barrels that had already hosted a Fiji rum as well as our stout. Cloves and nutmeg from the rum cask are the first to emerge on the sensory horizon, which fit snugly with the soft sweetness of smoky cherry wood chips and a touch of cherry sourness. Already on the tongue, the cherryiness bursts to the fore for a moment, only to slowly subside into the southerly spicy notes of rum in the aftertaste.
RUM BARREL AGED CHERRY MEAD

WITCH OF DARKNESS 15,6%
This is a contemporary remake of a prehistoric braggot that was served at a funeral in Egtved ~3390 years ago. Using the same raw materials - smoked and roasted wheat, honey, wild berries and wild herbs. On the nose smoked and toasted wheat is surrounded by honey with hints of lindenblossom. Further the sweetness of honey is balanced by slight tartness of cranberries and lingonberries, as well as the bitterness of the bog myrtle. The pleasantly warming strength of the beverage together with coffee notes dominate the aftertaste of this archeological drink.

VIBURNUM WILDLING 7.2%
Berry ale brewed according to the traditional Belgian method. Fermented with yeasts of the genus Brettanomyces, after which matured for 3 months on viburnum berries picked after the first frosts, at a ratio of 1/8. The nose is immediately occupied by the haunting timber like aroma of viburnum berries. On the tongue the viburnum berries open up and the bitter aroma is complemented by a haunted sweetness with a slight acidity. Just moving into the aftertaste, wild yeast esters also appear on the scene, which allows this show to move into the tracks of conventionally recognizable flavors that draw in the bare aesthetics of a late autumn forest.

A blended spontaneous fermentation ale brewed in the Belgian tradition. Since 2019, we are the only brewery in the Baltics to actively operate a coolship, and part of this wildale started off in that pre-plague and pre-war year. Blended with younger spontaneous fermentation ales from years 2020 and 2022. The aim of this Belgian method from beginning of 19th century is to weave the richly mossy and rustically spicy flavours of an older wildale with the refreshingly spicy elements of a younger wildale. Intended for immediate processing or longer maturation.
BLENDED SPONTANEOUS FERMENTATION ALE 2019
Ingredients: Water, barley malt, wheat, hops, yeast.
Cherry Wilding 6.6%A unique ale brewed with Brettanomyces lambicus since April of 2022 and matured on fresh cherries at ratio of 1/3 since July. The result is an ale with explicitly redish berry like acidity and a rich spiciness of wild yeast esters and phenols. All this in a carmine red with a penetrating fruitiness that belies the alcohol content. Maturation on cherrywood chips before bottling gives the ale a gently smoky sweetness with a pleasantly dry aftertaste that makes the glass empty faster than perhaps it should.

HONEYSUCKLE WILDLING 7.4%
A contemporary take on a classic Belgian style berry lambic, fermented with Brettanomyces yeasts from the Senne river valley and then matured on fresh Leningradskij velikan and Vostorg varieties of honeysuckle berries in a ratio of 1/4. The aroma of the deep purple beer wild yeast esters intertwine with black currant spiciness of honeysuckle berries. Other aspects of honeysuckle join on the tongue - the mossiness of blueberries and the characteristic tart of cranberries, which leaves a berry dry aftertaste.

LITTLE LINGONBERRY 3%
A contemporary take on a Belgian style berry lambic. Here we have fermented an extremely light wort with Brettanomyces genus yeasts and matured on fresh lingonberries for 3 months at a ratio of 1/8. On the nose, the bitter aroma of lingonberries is fresh and mossy, allowing you to slip into an autumnal seaside forest landscape. On the tongue, the tart nature of the lingonberries comes to life, complemented by sweet and spicy yeast esters, creating a delicate bouquet of a variety of forest berries, that fades into a refreshing aftertaste.
MIXED FERMENTATION LINGONBERRY ALE 2022

Lilac elder 6.6%
A seasonal blend of spontaneous fermentation beers from 2020 and 2022. Shortly before bottling this beer has been lusciously dryherbed with freshly picked lilacs at 50g per liter. The result hits the nose with the bittersweet aroma of lilac, which transforms the typical horseblanket of the style into a almost melon. However, in the taste, this apparent softness is replaced by the funky and spicy bouquet of wild yeasts, while notes of synthetically bittersweet lilac remain in the background. Finishes with a lingering aftertaste of ripe summer and good mood.
