A fresh look on a classic Belgian style berry ale. We added 1/5 fresh wild bilberries for a few months to a blended base from our foeder and a pure Brettanomyces fermenatation. The aroma of this brightly violet ale is intertwined with wild yeasts esthers with the mossy and slightly black currant like fruitiness of bilberries. On the tongue the violet becomes a taste - mesmerising beriness with notes of cherry, blueberry and some gooseberries. All of this with a refreshing aftertaste of a boreal forest.

€9.00This grape ale is brewed by aging some 2 year old barrel fermented beers from our coolship programme on freshly picked grapes at ratio 1/3. Mostly white Vandal Cliche, with a touch of red Jodkrante and Golubok for colour from Gatis Kužums vineyards near Bauska. The aroma is dominated by a moderate horseblanket with hints of ripe berries, which initially dances on the tongue with typical fruity flavors of older wildales, but then loosens up all the seriousness and turns into a playfully light and whitewiny aftertaste with a juicy apple finish.

€9.00This year during Ūsiņi our foeder experienced its first yeasts - from the 2020 coolship season barrel, from the spring night air of May 13, as well as from natural Latgale honey and juniper branches in the coolship. On the nose resinous smokiness compliments funky yeast esters and phenols. The tongue gets kicked with pungent sourness balanced with honey like sweetness. While the finish is juicy with a pleasantly wild and lingering aftertaste that craves for the next sip.

Lilac elder 6.6% (375ml)
€4.60A seasonal blend of spontaneous fermentation beers from 2020 and 2022. Shortly before bottling this beer has been lusciously dryherbed with freshly picked lilacs at 50g per liter. The result hits the nose with the bittersweet aroma of lilac, which transforms the typical horseblanket of the style into a almost melon. However, in the taste, this apparent softness is replaced by the funky and spicy bouquet of wild yeasts, while notes of synthetically bittersweet lilac remain in the background. Finishes with a lingering aftertaste of ripe summer and good mood.
