A raw mead with chamomile, meadowsweet and heather, fermented in a white wine barrel for two years after a night in our coolship. The aroma evokes the kinky side of chamomile with the presence of wild yeast esters and phenols. On the tongue, the sweetness of meadowsweet and the peaty heather balance the tangy, slippery notes of the raw mead that supplement the winey fruitiness. The boozy dry nature of the drink makes it all quickly fade into a refreshing aftertaste.
