PANTĀGA WITH MARINATED HONEY FUNGUS AND WILD GARLIC PESTO

    • A small onion
    • 100 g smoked meat
    • 100 g marinated honey fungus
    • 1 teaspoon dried porcini mushroom powder
    • Salt to taste

Preparation

  • ½ teaspoon baking powder

  • 200 ml kefir
  • Salt

Preparation

Whisk the eggs, add the melted butter, add the kefir and stir. Mix the flour with the baking powder and salt. Gradually add the flour mixture to the eggs and kefir. Mix everything well together. The consistency of the batter should be like sour cream. Heat a frying pan thoroughly and grease it well. Pour the batter into the pan and brown the pancakes on both sides.

Beef stew. You will need

  • 2 kg beef (cheeks, ribs, osso buco, tail)
  • 5 carrots
  • 3 onions
  • 3 garlic
  • 1 celery root
  • 15 fresh rosemary
  • 200 g flour
  • 20 g salt
  • 4 g paprika powder
  • 60 g sugar
  • 1 g cayenne pepper powder
  • 4 g cumin
  • 4 bay leaves
  • 4 g ground coriander
  • 1 l of broth

Rinse and peel the vegetables. Cut the vegetables into coarse pieces, the onions into four cuts and leave the garlic in the cloves. Mix the flour with the spices and put in a shallow tray. Keep the pieces of meat large enough to put on the pan. Coat the meat pieces in the flour mixture and place on a hot, greased pan. Brown on all sides. While the meat is roasting, have a beer. Choose something light as the stew will take several hours to cook. When the meat is done, place it in a fire pot with high sides. When all the meat is fried, then in the same pan fry all the vegetables and add them to the meat. Pour the water into the pan and let it cook for 5 minutes and then pour it over the meat. Add the rosemary, bay leaves and broth. Place the lid on the pan and simmer over a low heat for about four hours. Simmer until the meat is tender. Serve with pancakes and beer.

  • 3 eggs
  • 30 g sugar
  • 1 g vanilla sugar

  • 100 ml milk
  • 200 g sugar
  • 100 g butter

Preparation

Melt the butter and let it cool.

Beat eggs in a bowl with high sides, add sugar. Whisk with an electric mixer until the mixture doubles in volume. Add milk and melted butter. Mix flour with salt and vanilla sugar.

Gradually add the flour mixture to the egg mixture, continue mixing with the mixer until you get a homogeneous mass, without lumps.

Pour 2 tablespoons of batter onto a hot, lightly greased pan and spread it thinly in a circular motion. Cook for one minute on each side over medium heat. While the waffles are cooking, pour Faerie into a glass and get acquainted with the aromatic character of the drink. Remove the cooked waffle from the pan and fold it immediately as desired.
