CHANTARELLE WILDLING

SPONTANEOUS FERMENTATION CHANTARELLE ALE

A spontaneous fermentation ale, ritually hopped in our coolship by the attendees of the 2025 Divdurvjnieks minifest. During secondary fermentation, we added fresh Latvian chanterelles at a 1:14 ratio. The aroma of this young wild ale introduces itself with notes of lichen and gentle wild yeast phenols. On the palate, the chanterelles reveal their natural beauty—piquantly mossy and autumnally fungal. The finish offers a lightly smoky greeting from the wild yeast.
