A classic Belgian method berry beer. A beer fermented with yeasts of the genus Brettanomyces and aged for 3 months on partridge beans picked after the first frost, at a ratio of 1/8. The nose is immediately dominated by the ghostly woody aroma of partridge beans, with notes of gooseberries. It continues on the tongue, where the bitterness is complemented by a suspicious sweetness with a slight acidity. Only as the aftertaste progresses do the wild berry esters come on stage, which allows this performance to be steered along the lines of relatively recognisable flavours, which come through in the naked aesthetics of the late autumn woods.
