This year in Ūsiņi, our renovated wooden tank saw its first yeasts – from the 2020 barrel, from the night air of 13 May full of spring life, and from natural Latgale honey and juniper twigs soaked in wort during cooling. This beer-smelling, resinous haze fights for attention with the jankiness of various yeasty scents – moss, harness, wet fur. The characteristic notes of wild beers come to the tongue with a balanced acidic honeyiness and fruity threads. With a juicy finish and a pleasantly wild aftertaste that craves the next sip.
