This year during Ūsiņi our foeder experienced its first yeasts – from the 2020 coolship season barrel, from the spring night air of May 13, as well as from natural Latgale honey and juniper branches in the coolship. On the nose resinous smokiness compliments funky yeast esters and phenols. The tongue gets kicked with pungent sourness balanced with honey like sweetness. While the finish is juicy with a pleasantly wild and lingering aftertaste that craves for the next sip.
