SPONTANEOUS BARREL FERMENTED ALE 2020

Belgian-inspired spontaneous ale, that spent its coolship night on November 19, 2020, then slowly matured in oak for over five years. A juicy, tart aroma with threads of wild yeast phenols meets the palate with a venerable funk. Residual maltiness has transformed into a rounded caramel core, enveloping smoky gooseberry, crabapple peel astringency, and faint cognac notes. This piquant bouquet is bound by high alcohol, leaving a dry, heirloomish grip in the finish.
